Last night I got some inspiration to sleep early and wake up early. I went to bed at 11pm, that’s the earliest I could do. The previous night I was still up at 02.30am, trying to finish an assignment. I want to change the dynamics, maybe start going to bed early. Most of the time I sleep late when I have to finish some work, bake maybe or watch a movie or a TV series. I am the kind of person who can watch a whole season in one night, when the story line is so riveting, it’s hard to let go. There are many TV series that we agreed to watch with bae, together, but he takes them really slow, one episode per night or none at all, my curiosity doesn’t let me wait for him sometimes. I can watch ahead then repeat when watching together, then I have to be quiet and act like I don’t know what’s going to happen, can be tough sometimes.

Anyway, before I went to bed I decided to prepare some drop scones, for breakfast. It’s not easy waking up before 06.00am to just make them…plus the mixer is a bit loud, it can wake the kids early. From what I know, during this partial lock-down, when the kids are not going to school, it’s better to have them wake up when they are ready, because they make the day look so long and yet, they still wake up by 07.00 am. When you expect them to sleep some more, that’s when they wake up! I digress. I used a cake recipe for the drop scones, also, I used some cornmeal. They turned out so soft and yummy. I was proud of myself. Actually, every time I make something nice for my family, it makes me proud because I know they enjoy it.

I think I slept well…kind of. I had been complaining about my pillows and bae decided to get me a very nice pillow. Those memory foam pillows whose prices are extremely exaggerated, in my opinion. The first day I got the pillow, I was trying to find out why they are so exorbitantly priced, I still can’t quite explain it, makes no sense, but well, they are comfortable no doubt. I initially wanted a feather pillow. When I went to shop around for the feather pillows, I realised I could even roll the pillow into a ball, they were that soft. I wasn’t quite assured of my comfort, I may have had to get five of more, for ultimate stability and comfort and well, they don’t come cheap either. I’m still trying to work my comfort around this memory foam pillow though, my head is slowly adapting…slooooooowly adapting.

I mentioned that I made the drop scones with some corn meal. This seems to be my current addiction. Cornmeal does make the cakes delicious and with pancakes, makes them slightly crunchy, the nice crunch. It’s really nice. Considering, I haven’t baked a lot of cakes during this period, the cornmeal cakes have brought a nice change. The recipes are so simple, it’s amazing. I could have an hour to spare and have two cakes ready within that hour, I like it! Matter of fact, let me share the recipe here;

Ingredients:

1 Cup wheat flour

1 Cup corn meal

1 Tablespoon baking powder

1 Cup sugar

1 Cup milk

1/2 cup butter, melted

1 tablespoon vanilla extract

4 eggs

Procedure:

Preheat oven at 180 degrees Celsius/360 degrees Fahrenheit.

Prepare a baking tin

Sieve the wheat flour and mix it with the corn meal and baking powder

In a bowl, beat the eggs and sugar until very fluffy and light

Add vanilla extract

Add milk and oil

Fold the flour mixture into the wet ingredients, mix properly

Pour batter into the baking tin

Bake for 30-35 minutes or until a skewer inserted comes out clean.

I’ve been watching some very interesting American reality TV series on Netflix. This is how you know that the lock-down can get boring. I can’t believe I was even watching it, yet, I started enjoying it and I actually watched all of it, the whole season. Its called Too Hot To Handle. Hmm…well, I would rather not discuss it, it’s best watched, lol. It’s a dating show or something like that….though I just felt old watching it….quite dumb to be honest but isn’t that the gist of reality TV? No? Well, anyway, whatever makes money, right?! Controversy sells. Interesting times.

Anyway, today homeschooling the kids was just fine, except for my son’s lack of patience. These minions have all the energy in the world. I gave my daughter sixteen pages of homework- mainly painting and joining dots, the young lady finished all of it within 30 minutes, unbelievably fast. My son on the other hand, wouldn’t be bothered. He did a little colouring and adamantly expressed his interest in other things. When he’s bored, he can’t even pretend. I am learning to appreciate kindergarten teachers more, these offspring are work and I only have two!

It’s already time for the kids’ dinner. I made them their favourite dish, shepherd’s pie. It’s the only food they eat without leaving the table once. They have formed a habit of taking several bathroom breaks at meal times. It drives me crazy and they know it.  Sometimes I wonder whether they don’t enjoy the food, whether they are not hungry or whether walking around is more fun than the meal itself. They flocked around me as I took the pie out of the oven, delighted to see it ready. They kept saying “the pie smells so nice!” Music to my ears. Tonight, I’m looking forward to a peaceful dinner.

    Hey. The drop scones. How do you attain the shape? Do you just
    pour batter like in pancakes??

    1. Hey Stella, use a table spoon/dessert soon to do it, the batter is very soft and light so don’t scoop too much, also, to ensure they are well cooked, use low heat
